Viper — Operation

Beater Bar – Scrapper Blades Bushing
The beater bar arms are indexed so blades only go on one way but scrapper blades are reversible so the opposite edge can then be used to get extra life from blades. The plastic bushing is for the interface between the faceplate beater bar stainless steel pin and the end of the beater bar. There is only a single style bushing and it is white when new. It may turn the color of the product which is normal and not to get confused that bushings come in different colors.

Dispensing Valves – Motorman and SPN
The Motorman dispense valve with a caged O-ring should be serviced and lubricated (Dow-Corning DC-111) every 6 months or more frequently if the valve lever gets tight to operate. And the caged O-ring should be replaced every 12 months. The SPH dispense valve does not require routine service and disassembly to lubricate. Both valves are to be part of the Viper syrup system annual sanitize procedure during the annual PM.

Spinner – Viscosity Sensor
The spinner keeps the inside of the face plate from product build up. The viscosity sensors’ original purpose many years back in the V series FCB units was for sensing product thickness. Today it helps in the mixing of product near the front of the barrel.

Faceplate – Relief Valve
The faceplate is held to freeze barrel with 4 hex nuts and metal washers. Spacers are placed over the 4 threaded bolts first before installing the faceplate to help with faceplate alignment. It is required to place a light film of Dow corning 111 on the faceplate O-ring prior to installing. Hand tighten nuts until the faceplate makes contact equally on all four corners then use a wrench to tighten nuts an additional ¼ turn making sure not to overtighten. The relief valve in the faceplate unseats at approximately 50 psi and drains out the bottom of the faceplate edge into the drip tray.
