Annual
Viper — Cleaning and Maintenance
-
Check for Leaks
While doing a scheduled annual PM on the Viper unit preform a general inspection of the CO2, water and Syrup lines for signs of leaking. Also inspect in and around the Viper unit for any indications of leaking. If a leak is found, only a qualified technician should make the repairs needed to correct the leak.
-
Check Product Brix
Annually or when changing syrup types, the brix for each barrel should be checked using a refractometer to ensure the brix is set correctly for the product being dispensed.
-
Sanitize Unit
The syrup system is to be sanitized annually by a qualified service technician following the sanitizer manufacturer's recommendations to ensure 100PPM of available chorine. The step-by-step procedure is detailed in the Viper Owner’s manual provided with the Viper or can be found at the listed link.

Check or Rotate Scraper Blades
Scraper blades should be inspected for wear annually. The scraper blades can be reversed to get extended life depending on the wear pattern. If there is significant wear on the scraper blades or they have already been reversed, the scraper blades should be replaced. When reversing or replacing the scraper blades it is also recommended to replace the bushing in the end of the beater bar.
-
Clean Condenser Coil
The refrigeration system condenser should be inspected and cleaned annually for any collection of dust and debris the metal mesh air filter may not have captured. The condenser coil is best cleaned by the use of a vacuum. The use of compressor air or arousal sprays can leave the unit and the surrounding area of the Viper contaminated.

Replace Freeze Barrel Rear Seal
The rear seal for each barrel can be replaced from the front of machine. The use of a small screw or a hook to grab and pull the seal out of its housing is recommended. Care should be taken not to scratch or damage the drive shaft adaptor’s ceramic surface. When installing the new seal, lubricate the seals inside diameter only. Barrel seals should be replaced every 12 months during a scheduled PM.
